Back in the 19th century, I used to be a small, family-owned single stone oil mill, powered by a donkey. For many decades, thanks to the toil of local people, I turned the olives from the surrounding trees into the precious Paxos olive oil that fed the Paxiot families. That was until mechanisation and diesel engines rendered me obsolete. After almost 80 years of decay and abandon, I was resuscitated and given a new life as a holiday accommodation for visitors around the world, without sacrificing any of the surviving elements of my original function nor the landscape.
